  1. Syrup - 1 cup water to 1 cup sugar to form a thin sticky syrup (1 thread)
  2. Add a little water to yogurt and thin it down to pouring consistency. - Mix the sugar, butter, vanilla essence and yoghurt together, with a whisk. - Sift the dry ingredients together. - Add the yogurt mixture to the flour mixture to form a soft dough, using your hands or a spoon, if needed, add a little water or yogurt as not all flour absorption is the same, or a little flour if needed.
  3. Roll out the dough - and cut with a doughnut cutter or use a glass to cut the shape and then a bottle top to cut out the centre to form a hole. Deep fry in medium hot oil, not very hot oil as the outside will burn and the inside will stay raw. Fry until golden or the colour you want.
  4. After Frying, immediately dip the doughnut in syrup and immediately roll in desicated coconut. - For doughnuts rolled in sugar, don't make a syrup. Just fry the doughnuts and immediately roll in sugar or cinnamon sugar.
  5. For docorated doughnuts, after frying, let it cool. Then decorate with melted chocolate or 100's and 1000's or vermicelli chocolate sweets or decorate with glacé icing.
